The protein is marinated in adobo and morita peppers, seasoned with ground achiote, and finished with fresh lime, cilantro, and a splash of pineapple. The pineapple is the differentiator. It adds a brightness that cuts through the smokiness of the morita pepper in a way that regular Chipotle chicken simply does not achieve. The result is tangier, more complex, and noticeably juicier.
